Kate is also the Canadian Representative.  She has been invaluable in the process of setting up the new AKKPS Member Portal and supporting and working with Caroline (the President) the past 2.5 years.  Kate is the Business Continuity Coordinator working on keeping all back ups, insurances, and compliance items up to date ensuring the AKKPS data is safe and the AKKPS Members and Directors are protected. Kate process and audits the AKKPS Exclusive Breeders List.

Each month Jamie donates a great amount of time making sure the AKKPS Members receive eblasts, verifying contact forms are answered, prepping for BOD Meetings as well as taking notes during the meetings, helping with show coordination with the EKPA, sending out thank you's to members and developing the Fun Section of the monthly eblast.

Brenda has served the AKKPS on the BOD for many years and served as the AKKPS President previously.  Brenda takes care of of everything financial for the AKKPS - paying invoices, storing receipts in google docs, developing the yearly budget, and conversing with the accountant.  She also monitors and audits the AKKPS Members Only Facebook pages which is a daily job approving posts and new members as well as removing lapsed members.

Amanda is the center of everything pretty for the AKKPS.  She designs all of the AKKPS Custom items for the website, Merch and the Society eblasts.  She also stores and mails out all of the purchased AKKPS Merch as well as the thank you's to AKKPS Members who submit items the AKKPS uses in the eblasts and website.  Amanda also takes care of all of the digital advertising for the AKKPS on Social Media promoting the Breeders Lists, Pigs for Sale, Education Section and important articles of the AKKPS website.

ITALIAN SAUSAGE PIZZA

DOUGH

3/4 cup Sourdough discard that has been fed within 24 hrs.

1 tbl spoon salt

1 tbl spoon sugar

2 tbl spoon olive oil

2 cups flour. With extra for dusting

1/2 cup luke warm water


PIZZA TOPPINGS

6 Fresh basil leaves sliced

Half pound spicy KuneKune Italian sausage.

2 cups cheese. We like an Italian mix that has mozzarella, Romano, and Parmesan

1/2 cup pizza/spaghetti sauce of your choosing

1 tbl spoon butter

1-2 fresh Roma Tomatoes sliced

1 tsp dried basil

Balsamic glaze


  • Mix all dough ingredients in Kitchen Aid and add water until no longer appears dry. I usually start with about half a cup. You can add a little more if still too dry or add flour by the tbl spoon if too wet until you have a dough. Mix on medium until well integrated, about a full minute
  • Place the dough in an oiled bowl with a towel over it in a warm place.
  • Preheat the oven at 450°. We use a 14" pizza stone and leave it in the oven to preheat. You could use a pan if you don't have a stone.
  • Cook your Kunekune sausage. Once fully cooked remove from heat until ready to build the pizza.
  • Once the oven gets to temp, dust the counter with flour and roll out your dough to size. You'll want it to be about a inch or two larger than the pizza stone
  • Remove the pizza stone from the oven.
  • Dust the pizza stone with flour and lay the dough on top. Roll and pinch the edges to make the crust.
  • Add a pizza or spaghetti sauce of your choosing. We like light sauce so a light coating is plenty for us.
  • Then add all but quarter cup of your cheese. Add your cooked sausage. Then add the chopped basil and the remaining cheese.
  • Bake for 18 minutes at 450°
  • Remove pizza from the pizza stone, rub crust with butter, and add fresh sliced tomatoes and dried basil. Drizzle with balsamic glaze (optional)

Slice and enjoy!

WHAT IS IN MY FARROWING KIT .......

I am often asked "what's in your farrowing kit?"

Many people are completely hands off during farrowing while many are the total opposite and there for every second.  Either way, being prepared is extremely important.

For my farrowing kit, I have a tote packed with all of my essentials which lives in a larger tote containing a blanket or two. 
The first kit stays packed after each farrowing so I am ready at a moment's notice.  The second, larger tote is a just in case.  I have had situations where a sow doesn't want to be bothered by babies during labor or she is a jumper/mover.  Sows who are active in labor can be dangerous to tiny, newborn piglets.  I will place the newborns in the larger tote on blankets until the mother is ready for them and calm.  Depending on the temperature, I may place one end of the tote under a heat lamp.

My Farrowing Kit Contains 
1. 12-15 hand or tea towels to dry babies
2. medical gloves in case you need to help your sow internally or to keep your hands clean
3, hand sanitizer (we actually keep a bottle in each farrowing area full time)
4. baby or wet wipes
5. small scissors for clipping umbilical cords
6. dental or embroidery floss for tying off umbilical cord
7, iodine for dipping cords
8. tums for your sow (or you if needed)
9., melatonin to calm your sow
10. a snack and bottle of water for you
11. phone charger or battery pack
12. small notebook and pen for notetaking
13. grocery bags for trash/placenta
14. disposable potty pads for messy sows to keep from ruining too much bedding
15. insect spray or wipes during warmer months.  We use Nature's Force natural fly spray and apply it to the entire rear end of our sows immediately after delivery and for several days after when flies are present
16, hoof trimmers because labor can be an easy time to trim their feet
17. a bottle of lube
18. thermometer
19, tape your vet and emergency vet's phone number to the inside lid of your tote
20. bulb syringe for babies with too much blood, mucous, or fluid in their mouth or airway
21. flashlight, headlamp, or camping lantern

My Medical Farrowing Kit Contains
1. injectable calcium if your sow is tired and struggling
2.  various sized syringes and needles and a slap shot
3.  oxytocin for stalled labor
4. banamine or meloxicam for pain (this is a prescription item you will need to obtain from your vet)
5. a heating pad for a baby that might need extra warmth
6. karo syrup
7. your antibiotic of choice in case your sow needs internal assistance

Obviously, not everyone's farrowing kit will be the same and these are simply suggestions. Make your kit work for you! Decide what you need and what is important for you and your sow to have the best experience during farrowing.

THE BENEFITS OF A MEAT HERD

“Why do I need a meat program?”  is a question often asked when raising KuneKunes. There are many reasons why having a meat program, especially with today's food security issues, is necessary. Creating a meat production program for your herd can benefit you economically, operationally, and for the breed's preservation.

First and foremost, is the need to have a program that addresses your cull pigs that don’t meet the current breed standard, and undesirable traits need to end with that individual pig. This is especially true with gilts. Sold without being spayed as pets, companions, or other reasons contribute to the passing on of bad traits. With a pork program, a farm can sell only the best as fully registered breeding stock, barrows (castrated males) as pets, companion pigs and meat pigs while you retain gilts for meat on your own farm. Contrary to popular belief gilts and sows can be utilized in the same way as their male counterparts and are often better for some products. They make excellent salami and other charcuterie meats.

Another advantage is a pork program has the potential to increase your farm's profitability. By establishing a systematic approach to breeding, raising, and managing your pigs, farmers can optimize the growth rates and health of their herds, leading to higher-quality meat products that are more attractive to buyers. Your buyers can be local consumers from the farmers market, or those who visit your on-farm store, restaurants, or larger-scale distributors. #AKKPSPROUD This can result in better market prices and a steady income stream.

Improved efficiency and resource management can also be a result of having a meat program. A well-structured meat production program includes detailed planning for feeding, medical care, housing, and overall pig welfare. By standardizing these practices, farmers can reduce waste, minimize the risk of disease, and ensure that their pigs are growing in the most cost-effective and healthy manner possible. Efficient resource use not only cuts down on unnecessary expenses but also contributes to sustainable farming practices, which are increasingly important in today’s environmentally-conscious market.

At the end of the day, how do you plan on using those pigs that you know are not ones that should be used as breeding stock? You don’t even have to jump into selling retail cuts, a nice family or gathering of friends with KuneKune as your main meat course can be all it takes to get people to purchase butchered halves or whole pigs. You can be a small hobby farm up to a pork production farm with these ideas in place. By doing this you are helping your farm and the breed. You can start to chip away at that feed bill with the profit of a couple of sold butchered pigs.
